The Food Standards Agency (FSA) is concerned about the authenticity of ingredients being used in the hospitality sector, including the substitution of ‘turkey ham’ for the real thing particularly in the pizza sector.
Turkey ham is a processed meat product made from cured turkey meat, water, and seasonings, shaped and flavoured to mimic traditional pork ham. There are also reports of lamb being substituted for goats meat. It should never be described as Ham which is prescribed in UK law. Operators should ensure that the ingredients they use are authentic as local authorities will be focusing on the authenticity of ingredients this year.
